Loin has less fatty layer and more muscle layer, it’s considered as a nice part of meat. Loin is suitable for making pork cutlets or steak. It has a stronger meaty aroma after cooking. It’s not suitable to cook for a long time; but short time cooking like fry pork cutlets or sliced thinly to stir fry can have a good taste of meat
Suggestion: Use shorter cooking time
油脂偏少、肉質富咬勁,算是豬肉中很好的部分。一大塊特別適合做成炸豬排或煎猪排,料理後有更濃厚的肉質香味。不適合長時間烹煮;但短時間的烹煮,像是厚切做成炸豬排,或者切絲快炒的口感都很好,可以吃得到肉的咬勁。
